近年のガストロノミーとホスピタリティの世界では、長く男性中心で語られてきた構造を見直し、多様な視点や働き方に光を当てる動きが広がっている。今作はそうした流れの中でGuide Michelinが立ち上げたポッドキャスト企画を起点としている。
2025年春、Guide Michelinは「Oui, Cheffes !」と題したポッドキャストシリーズを開始した。
料理やホテル業界で活躍する女性シェフに焦点を当て、その歩みや仕事への向き合い方、現場で培われた思考を記録する試みである。
第1シーズンではAnne-Sophie Pic アンヌ＝ソフィ・ピック、Sarah Benhamed サラ・ベナメド、Nadia Sammut ナディア・サミュット、Blanche Loiseau ブランシュ・ロワゾー、Georgiana Viou ジョルジアナ・ヴィウの5名が登場している。
今作はその音声コンテンツをもとに再構成された書籍であり、単なる書き起こしではなく、写真やルセットを加えることで、それぞれの人物像や仕事の輪郭を立体的に伝えている。各章では、キャリアの歩みや価値観、料理と向き合う姿勢が語られ、現在進行形のガストロノミーの一端が浮かび上がる構成となっている。
料理界における女性の立場を主題としながらも、今作が扱っているのは個々の経験と思考そのものである。それぞれの情熱や哲学を感じることができる一冊だ。
In recent years, the worlds of gastronomy and hospitality have seen a growing movement to reassess structures long discussed from a predominantly male perspective, bringing greater attention to diverse viewpoints and ways of working. This book emerges from that context and takes as its starting point a podcast initiative launched by the Guide Michelin.
In spring 2025, the Guide Michelin introduced the podcast series Oui, Cheffes !. Focusing on women chefs active in the culinary and hospitality fields, the series records their journeys, their relationship to work, and the ways of thinking forged through daily practice.
The first season features five chefs: Anne-Sophie Pic, Sarah Benhamed, Nadia Sammut, Blanche Loiseau, and Georgiana Viou.
This volume is a book-length adaptation of that audio content. Rather than a simple transcription, it incorporates photographs and recipes to give a more three-dimensional portrait of each figure and her work. Across the chapters, the chefs’ career paths, values, and approaches to cooking are explored, offering a glimpse into gastronomy as it is being shaped today.
While the position of women in the culinary world forms an underlying theme, the focus of the book lies on individual experiences and ways of thinking. It is a volume that allows the reader to sense the passion and philosophy of each chef.
