2021年1-2月号を最後に廃刊となっていたが、多くのファンからの声を受けて復刊されたyam。
年間で発刊されるのは6冊で、その中には通常版以外にドリンク版(夏)、パティスリー版(冬)、特別号2冊が含まれている。
今号で特集が組まれているのは偶像破壊的で創造的、革新と伝統の融合、フュージョン料理の先駆者など、様々な評価を得ているシェフ、Pierre Gagnaire ピエール・ガニェールだ。
1981年に自身のレストランをオープンし、1993年にミシュラン三ツ星を獲得。現在はフランス以外にダナン、ドバイ、ロンドン、ソウル、上海、東京など世界中にレストランを展開しており、2024年には全ての施設で計13の星を獲得している。
今号では三ツ星を獲得しているフラッグシップレストランの他、一ツ星のGaya、イタリア料理を提供するPiero TTなどそれぞれ違った特徴を持ったルセットが掲載されている。70歳を越えてますますその円熟味を増してきたPierre Gagnaire ピエール・ガニェールの料理をご覧いただきたい。
The magazine yam, which had ceased publication with its January–February 2021 issue, was revived following strong demand from its readership. It now publishes six issues per year, comprising regular editions alongside a summer drinks issue, a winter patisserie issue, and two special issues.
This issue is dedicated to Pierre Gagnaire, a chef widely described as iconoclastic and deeply creative, known for blending innovation with tradition and recognized as a pioneer of fusion cuisine.
He opened his first restaurant under his own name in 1981 and was awarded three Michelin stars in 1993. Today, his restaurants extend far beyond France, with locations in cities such as Da Nang, Dubai, London, Seoul, Shanghai, and Tokyo. As of 2024, the establishments bearing his name collectively hold a total of thirteen Michelin stars.
This issue presents a range of recipes from restaurants with distinct identities, including his three-Michelin-star flagship restaurant, the one-Michelin-star Gaya, and Piero TT, which focuses on Italian cuisine. Together, they offer a broad view of his culinary language.
Now well past the age of seventy, Pierre Gagnaire’s cooking continues to deepen in maturity, and this issue provides an opportunity to engage with the evolving expression of one of the most influential figures in contemporary French gastronomy.
