2021年1-2月号を最後に廃刊となっていたが、多くのファンからの声を受けて復刊されたyam。
年間で発刊されるのは6冊で、その中には通常版以外にドリンク版(夏)、パティスリー版(冬)、特別号2冊が含まれている。
今号では地中海を望む絶景のテラスで地元の新鮮な食材を活かした料理を楽しむことができる三ツ星レストラン、La Villa Madie ラ・ヴィラ・マディのシェフ、Dimitri Droisneau ディミトリ・ドロワノーの特集が組まれている。
La Tour d'Argent ラ・トゥール・ダルジャンやLucas Carton リュカ・カルトン、Le Bristol ル・ブリストル、L'Ambroisie ランブロワジーといったパリの名立たる名店で腕を磨いたDimitri Droisneau ディミトリ・ドロワノーは2013年にLa Villa Madieを妻と共に買収、2022年に三ツ星に昇格した。
今作で掲載されているその料理は控えめで華やか、エネルギーに満ちながらも洗練されたものになっており、三ツ星の評価に相応しい調和のとれたものばかり。
また後半部分のMYAM!ではブルゴーニュ地方ソリューにある伝説的なレストランLa Maison Loiseau メゾン・ロワゾーの50周年を記念し、Louis Philippe Vigilant ルイ＝フィリップ・ヴィジラントとそのチームによる料理が掲載されている。
テロワールの特色も感じることができる1冊だ。
The magazine yam, which had ceased publication with its January–February 2021 issue, was revived in response to strong demand from its readership. It now releases six issues per year, including regular editions alongside a summer drinks issue, a winter patisserie issue, and two special issues.
This issue features chef Dimitri Droisneau of the three-Michelin-star restaurant La Villa Madie, renowned for its spectacular terrace overlooking the Mediterranean and its cuisine built around fresh local ingredients.
After honing his skills at leading Parisian institutions such as La Tour d'Argent, Lucas Carton, Le Bristol, and L'Ambroisie, Dimitri Droisneau acquired La Villa Madie with his wife in 2013. The restaurant was awarded its third Michelin star in 2022.
The dishes presented in this issue are restrained yet expressive, energetic yet refined, and consistently balanced, reflecting the harmony expected of a three-Michelin-star kitchen.
In the latter section, MYAM!, the magazine marks the 50th anniversary of the legendary Burgundy restaurant La Maison Loiseau, featuring dishes by Louis Philippe Vigilant and his team.
Altogether, the issue offers a perspective that also conveys a clear sense of terroir.
