This book is authored by Christophe Felder, who became chef pâtissier of the Hôtel de Crillon at just twenty-three years old, together with his protégé Camille Lesecq, who likewise assumed the role of chef pâtissier at Le Meurice at the age of twenty-three.
Both chefs have published numerous books to date, and this volume is devoted entirely to chocolate.
Approximately 160 recipes are included, ranging from foundational preparations to chocolate tablets, pound cakes, flans, confectionery, plated desserts, beverages, patisserie items, baked goods, brioches, and even breads.
Every page presents work of consistently high quality, and it would not be an overstatement to say that the book spans the full spectrum from classic chocolate confections to more contemporary expressions.
