スペインだけでなく世界各国のトップシェフが登場し、最新の料理を紹介しているsaber y sabor。
196号からページ数やデザインを変更し年2回の発行へと移行した。

今号は記念すべき200号として、Enigma、Miramar、Voro、Ramon Freixa Atelierといった三ツ星を目指すレストランを特集。レシピと共にそれぞれの哲学や目指す方向性を示している。

さらに、Charles Spenceによるガストロフィジクスの研究や、リパーゼ、プロテアーゼ、トランスグルタミナーゼといった酵素の活用、セイボリーアイスの展開など、科学的アプローチを取り入れた料理の可能性にも踏み込んでいる。

Saber y Sabor features not only leading chefs from Spain but also top chefs from around the world, presenting the latest developments in contemporary cuisine. From issue 196 onward, the magazine shifted its format, updating its design and moving to a biannual publication schedule.

This milestone Issue 200 focuses on restaurants striving for a third Michelin star, including Enigma, Miramar, Voro, and Ramón Freixa Atelier. Through both recipes and editorial features, it presents their philosophies and culinary direction.

The issue also explores scientific approaches to cooking, including Charles Spence’s work on gastrophysics, the use of enzymes such as lipase, protease, and transglutaminase, and the development of savoury ice creams, highlighting new possibilities in modern gastronomy.

In the final section, it features dessert creations and pairings by René Frank, offering insight into the evolving role of desserts within fine dining.
