English Description

Joshua McFadden, author of the James Beard Award–winning Six Seasons: A New Way with Vegetables, introduced a new way of thinking about the relationship between vegetables and the seasons.

In this book, he extends that philosophy to pasta, creating dishes from everyday dried pasta and seasonal ingredients.

McFadden compares making pasta to writing haiku.

Both are short and simple, and may appear easy at first glance. But to create something that truly resonates, one must pay close attention to balance, subtle differences, and the nuances of every element.

The book features more than 125 recipes built around seasonal ingredients: artichokes, tomatoes, and mint in spring; mushrooms and pancetta in autumn; broccoli and celeriac in winter, among many others. Italian classics such as Cacio e Pepe and Pasta e Fagioli are also included.

Beyond the recipes, McFadden carefully explains the finer details that become especially important in such seemingly simple dishes: matching pasta shapes with sauces, achieving the right degree of doneness, using salt and fats effectively, and bringing pasta and sauce together in the skillet with pasta cooking water.

Rather than focusing on special ingredients or handmade fresh pasta, this book offers a different approach—developing the intuition and technique needed to transform everyday dried pasta and seasonal ingredients into something truly delicious.

一年を春、初夏、盛夏、晩夏、秋、冬という「6つの季節」に分け、野菜の旬を捉え直した『Six Seasons: A New Way with Vegetables』。
