Les Ambassadeurs du Pain is an international organization whose mission is to promote exchange among bakers, support the development of young professionals, and ensure the transmission of traditional baking techniques. The organization also has a Japanese branch, which regularly organizes seminars and competitions.

This book by Les Ambassadeurs du Pain follows Un Monde de BRIOCHES Volume 1 and brings together around 60 brioche recipes in a wide range of variations. Both creative and traditional in spirit, these brioches are grouped into eight categories.
