著者のClaudia Roden クラウディア・ローデンはエジプト・カイロ生まれの料理研究家。
パリで学び、のちにロンドンへ移住。中東料理や地中海料理を英語圏に紹介した先駆的な存在として知られている。これまでにThe Food of ItalyやThe Food of Spainなど多数の著作を発表し、世界各国の言語に翻訳されてきた。

本書ではプロヴァンスの農家、レバノンの港町、アンダルシアの海岸、モロッコの市場など、地中海を囲む各地の食文化を背景にした料理を紹介。オリーブオイル、ザクロのモラセス、ハリッサなど、この地域を象徴する食材を用いながら、日常の食卓で作りやすい料理が並ぶ。

Mediterranean cuisine is a food culture shaped by olive oil, herbs, spices, and the bounty of both sea and land. This book introduces the richness of that vast culinary region through recipes accompanied by the author’s memories and travels.

The author, Claudia Roden, was born in Cairo, Egypt. After studying in Paris, she moved to London, where she has lived since. She is widely regarded as a pioneering figure who introduced Middle Eastern and Mediterranean cuisine to English-speaking audiences. Over the years she has published numerous books, including The Food of Italy and The Food of Spain, many of which have been translated into several languages.

In this volume, recipes are presented alongside the food cultures of regions surrounding the Mediterranean, from Provençal farmhouses and Lebanese ports to the beaches of Andalusia and the markets of Morocco. Using ingredients emblematic of the region such as olive oil, pomegranate molasses, and harissa, the book offers dishes that are both approachable and rooted in local traditions.
