今作はソウルの江南エリアにあるパティスリー兼クラスのMon choixによる書籍だ。

オーナーシェフのKim Jihoonは、2017年よりSPC Culinary AcademyおよびMon choixマスタークラスで多数の受講生を指導してきた。フランスでの研鑽と現場経験の中で培ってきたノウハウを、惜しみなく公開している。

This book is published by Mon choix, a patisserie and pastry class based in the Gangnam area of Seoul.

Owner chef Kim Jihoon has trained numerous students since 2017 through SPC Culinary Academy and the Mon choix Masterclass. Drawing on his training in France and extensive professional experience, he shares the techniques and practical know-how he has developed over the years.

The book is structured around his masterclass curriculum. It begins with dough Q&A and expands to cover creams, chocolate, and decoration.
