この파티씨에 Patissier は韓国のプロのパティシエ達に長年愛されている雑誌で最新の世界のトレンドやグッズの紹介や一つのテーマについての特集などが組まれている。

今号の特集のテーマは梨。

韓国産の梨を用いたケーキ中心に、形状や構成、クリームの質感、素材の組み合わせの違いを掘り下げ、同じ素材から生まれる多様な表現を写真とともに紹介している。季節素材をどのように組み合わせ、どのように店の個性として落とし込むかが整理された内容となっている。

そのほか、今号ではフランスのショコラトリー Chapon シャポンを取り上げ、カカオの個性や菓子への落とし込みを紹介する企画や、日本のホテルパティスリーによる2025年クリスマスケーキの動向を追ったレポートを収録している。あわせてニューヨークの菓子・ベーカリーシーンを現地取材し、都市型デセールの表現や店づくりの在り方にも触れている。

Patissier (파티씨에) is a long-established magazine widely read by professional pastry chefs in Korea, featuring coverage of global trends, tools, and in-depth thematic features.

The special theme of this issue is pear.

Focusing mainly on cakes made with Korean pears, the feature explores differences in form, composition, cream textures, and ingredient pairings. Through detailed photographs, it presents the wide range of expressions that can emerge from a single seasonal ingredient, offering insight into how such materials can be combined and translated into a patisserie’s individual identity.

In addition, this issue includes a feature on the French chocolaterie Chapon, examining the character of cacao and how it is expressed in pastry, as well as a report on 2025 Christmas cake trends from Japanese hotel patisseries. A further on-site report looks at the pastry and bakery scene in New York, touching on contemporary urban dessert expressions and approaches to shop design.
