This book is the third publication by Kim Dongseok, following The Basic and How to Make My Own Recipe. In this volume, titled Signature, he proposes ideas for creating pâtisserie that express a chef’s own identity and creative voice.

Rather than relying solely on standard silicone molds, the book introduces ways to generate new shapes by adapting everyday tools and utensils. Techniques such as pressing structures into form, shaping chocolate shells, and creating patterns with scrapers demonstrate how desserts can be constructed without molds. It also explains methods for modifying existing molds and developing decorative elements through conceptual thinking.

The book further organizes essential knowledge for pâtissiers, including maintenance and use of the pistolet (spray gun), chocolate blending, color expression, and practical spraying techniques. It also explores the principles behind making handmade molds using edible silicone.
