2021年1-2月号を最後に廃刊となっていたが、多くのファンからの声を受けて復刊されたyam。
年間で発刊されるのは6冊で、その中には通常版以外にドリンク版(夏)、パティスリー版(冬)、特別号2冊が含まれている。

今号では南仏モナコのAlain Ducasse アラン・デュカスによるLe Louis XV ル・ルイ・キャーンズでシェフを務めるEmmanuel Pilon エマニュエル・ピロンに焦点が当てられている。

2022年より同店のシェフを務める彼は、デュカスの系譜を踏まえながら、地中海の素材や感覚を取り入れた「ナチュラリテ・メディテラネアンヌ」という方向性を提示している。掲載されているルセットでは、軽やかさと構築性を併せ持つ現在的なフランス料理の表現が示されている。

加えて、パリのブラッスリーDessirier デシリエを率いるOlivier Fontaine オリヴィエ・フォンテーヌの章も収録されており、魚介を中心としたクラシックな料理を現代に接続するアプローチが紹介されている。

さらに、コルシカ島のチーズ生産やミュスカデのワイン、職人の仕事など、料理を支える周辺領域にも言及されており、単なるレシピ集にとどまらない構成となっている。

yam., which had ceased publication with its January–February 2021 issue, was revived following strong demand from its readers.
It is published six times a year, including the standard issues as well as a drinks edition (summer), a pâtisserie edition (winter), and two special issues.

This issue focuses on Emmanuel Pilon, chef of Le Louis XV by Alain Ducasse in Monaco, in the south of France.

Since taking the position in 2022, he has developed an approach rooted in Ducasse’s lineage while incorporating Mediterranean ingredients and sensibilities, expressed through the concept of “naturalité méditerranéenne.” The featured recipes illustrate a contemporary expression of French cuisine, combining lightness with structural precision.

In addition, a section is dedicated to Olivier Fontaine of the Parisian brasserie Dessirier, presenting an approach that connects classical seafood-focused cuisine with a modern context.

The issue also explores surrounding elements of gastronomy, including Corsican cheese production, Muscadet wines, and artisanal craftsmanship, offering a perspective that goes beyond a simple collection of recipes.
