2021年1-2月号を最後に廃刊となっていたが、多くのファンからの声を受けて復刊されたyam。
年間で発刊されるのは6冊で、その中には通常版以外にドリンク版(夏)、パティスリー版(冬)、特別号2冊が含まれている。
今号で特集が組まれているのは1930年頃に創業し、4世代にも渡りながら三ツ星を継承するという世界でも稀な偉業を成しているトロワグロ家の4代目、César Troisgros セザール・トロワグロ。サステナビリティ、自然との共生、直感的かつ詩的な料理スタイルを重視している人物だ。 三ツ星を獲得しているLe Bois sans feuilles ル・ボワ・サン・フイユの料理が掲載されており、現代のフランス料理界を象徴する新しい世代のシェフとして注目されている彼のノウハウが惜しみなく公開されている。
その他にもMOF フランス国家最優秀職人章を受章しているJoseph Viola ジョゼフ・ヴィオラによるブション、Daniel & Denise ダニエル＆ドゥニーズの料理も紹介されており、クラシックなフランス料理を見ることもできる。
異なる方向性ながらもこれぞフランスといった料理が掲載された1冊だ。
The magazine yam, which had ceased publication with its January–February 2021 issue, was revived following strong demand from its readership. It now publishes six issues per year, including regular editions alongside a summer drinks issue, a winter patisserie issue, and two special issues.
This issue is dedicated to César Troisgros, the fourth-generation member of the Troisgros family, who have carried forward three Michelin stars across four generations since the restaurant’s origins around 1930—an achievement that remains exceptionally rare worldwide. Emphasizing sustainability, coexistence with nature, and an intuitive, poetic culinary language, Troisgros represents a distinctly contemporary vision of French cuisine. The issue features dishes from the three-Michelin-star Le Bois sans feuilles, offering an open look at the techniques and thinking of a chef regarded as a leading figure of a new generation in French gastronomy.
The issue also introduces classic French cooking through the work of MOF (Meilleur Ouvrier de France) recipient Joseph Viola, with bistro-style dishes from Daniel & Denise.
Although the approaches differ, the selection as a whole presents cuisine that unmistakably expresses the character and breadth of France.
