2021年1-2月号を最後に廃刊となっていたが、多くのファンからの声を受けて復刊されたyam。
年間で発刊されるのは6冊で、その中には通常版以外にドリンク版(夏)、パティスリー版(冬)、特別号2冊が含まれている。
今号ではGiuliano Sperandio ジュリアーノ・スペランディオが率いるレストラン、Le Taillevent ル・タイユヴァンを軸とした特集が組まれている。クラシックなフランス料理の系譜を受け継ぎながら、現代的な感性で再解釈する姿勢がインタビューと料理の両面から掘り下げられている。
ルセットのパートではTaillevent タイユヴァンという伝統ある二ツ星レストランらしいクラシックをベースにした洗練された料理が掲載されている。
あわせて、David Galienne ダヴィッド・ガリエンヌによるレストランLe Jardin des Plumes ル・ジャルダン・デ・プリュムの章も収録されており、自然や土地との関係性を重視した料理観が紹介されている。両者のアプローチは対照的でありながら、現代ガストロノミーの現在地を多面的に映し出している。

After its discontinuation with the January–February 2021 issue, yam was revived in response to strong demand from its readership. The magazine now follows a six-issue annual schedule, comprising regular issues alongside a summer drinks edition, a winter pastry edition, and two special issues.
This issue centers on Giuliano Sperandio, who leads the restaurant Le Taillevent. Through interviews and dishes, it explores his approach to reinterpreting the classical lineage of French cuisine with a contemporary sensibility.
In the recipe section, refined dishes rooted in the traditions of Taillevent, a long-established two-Michelin-star restaurant, are presented, highlighting a classical foundation shaped with precision and elegance.
The issue also includes a chapter devoted to David Galienne and his restaurant Le Jardin des Plumes, where a cuisine attentive to nature and terroir is introduced. While their approaches differ, the two chefs together offer a multifaceted view of the current landscape of contemporary gastronomy.
Overall, the issue provides a layered perspective on the present state of gastronomy, extending beyond recipes to consider the environments and ideas that surround today’s culinary practice.
