2021年1-2月号を最後に廃刊となっていたが、多くのファンからの声を受けて復刊されたyam。
年間で発刊されるのは6冊で、その中には通常版以外にドリンク版(夏)、パティスリー版(冬)、特別号2冊が含まれている。
今号ではスイス・ローザンヌのテロワールを舞台に、三ツ星シェフAnne-Sophie Pic アンヌ・ソフィー・ピックが手掛けるレストランの変革を軸に特集を展開している。
Anne-Sophie Pic アンヌ・ソフィー・ピックといえばフランス・ヴァランスの3代に渡ってミシュラン三ツ星を獲得しているMAISON PICのシェフだが、スイス・ローザンヌにある名門ホテルBeau-Rivage Palace ボー・リヴァージュ・パラスでも2009年からレストランを構えており、2025年現在ミシュラン二ツ星を獲得している。
今号でもレマン湖周辺のテロワールを活かした食材を用いた彼女らしいエレガントかつ現代的な料理が掲載されている。
また後半部分のMYAM!ではイタリア出身で日本、韓国、フィリピンなどで育ち、ピエール・ガニェールのGaya ガヤなどで腕を磨いたValentina Giacobbe ヴァレンティナ・ジャコッベが特集されている。多文化なバックグラウンドと野菜中心で季節性を活かした創造的なガストロノミーは非常に興味深い。
それぞれ違った方向性ながらも多くのゲストを魅了する料理人のクリエーションをご覧いただきたい。
The magazine yam, which had ceased publication with its January–February 2021 issue, was revived following strong demand from its readership. It now publishes six issues per year, comprising regular editions alongside a summer drinks issue, a winter patisserie issue, and two special issues.
This issue is centered on the terroir of Lausanne, Switzerland, and focuses on the transformation of a restaurant led by three-Michelin-star chef Anne-Sophie Pic.
Anne-Sophie Pic is known as the chef of MAISON PIC in Valence, France, a restaurant that has held three Michelin stars across three generations. Since 2009, she has also operated a restaurant at the prestigious Beau-Rivage Palace in Lausanne, which holds two Michelin stars as of 2025.
This issue presents her signature elegant and contemporary cuisine, highlighting ingredients drawn from the terroir around Lake Geneva.
In the latter section, MYAM!, the magazine features Valentina Giacobbe, an Italian-born chef raised in Japan, Korea, and the Philippines, who refined her skills at establishments including Pierre Gagnaire’s restaurant Gaya. Her creative gastronomy, shaped by a multicultural background and centered on vegetables and seasonality, offers a compelling perspective.
Although their approaches differ, both chefs’ culinary creations continue to captivate a wide audience, and this issue offers an opportunity to explore their distinct visions.
