『日本料理の甘味・デザート』は青山クラブで料理長を務めた遠藤 十士夫と、京料理まる多主人の丸田 明彦による共著で、和食の甘味を十二カ月の季節ごとにまとめた一冊である。和食業界を支えてきた料理人による視点から、甘味の役割や考え方が丁寧に語られている点が魅力となっている。
内容としては一月の瑞雪や福寿芋から始まり、春の桜餅、夏の水仙台、秋の栗餅、冬の柚子釜など、季節を感じる甘味の数々が掲載され、それぞれにレシピと仕立てのポイントが添えられている。さらに巻末では、こし餡・白餡・シロップ煮・ゼラチン・寒天など、基礎技法も整理されており、甘味の基本を理解するうえでも役立つ構成になっている。
盛り付け、器選び、素材の扱いなど、日本料理ならではの細やかな感覚に触れられ、料理の流れの中に甘味をどう位置づけるかを見直すきっかけにもなる。四季の情景とともに、和の甘味が持つ奥行きを静かに味わえる一冊である。

Japanese Cuisine Desserts is a collaborative work by Endo Toshio, head chef of Aoyama Club, and Maruta Akihiko, proprietor of the Kyoto restaurant Maruta. The book organizes traditional Japanese sweets throughout the twelve months, presenting the role and philosophy of wagashi from the perspective of chefs who have long supported the Japanese culinary world.
Beginning with New Year desserts such as “zuise” and “fukujimo,” and moving through spring sakuramochi, summer mizu-yokan, autumn chestnut confections, and winter yuzu bowls, the book introduces a wide range of seasonal sweets. Each entry includes a recipe and key points of preparation. The appendix also covers essential foundational techniques—such as smooth bean paste, coarse bean paste, syrup preparation, gelatin, and kanten—making it a practical reference for understanding the basics of Japanese desserts.
From plating and vessel selection to ingredient handling, the book offers a close look at the delicate sensibilities unique to Japanese cuisine. It provides an opportunity to reconsider the place of desserts within a meal and to quietly appreciate the depth and elegance of Japanese sweets alongside the shifting seasons.
