This work is a book by the talented pastry chef Jeffrey Cagnes, offering a clear sense of his distinctive creative world.
Jeffrey Cagnes began his career as an apprentice at Stohrer, before refining his skills with Pascal Caffet, at Yamazaki in Paris, at Hédiard, and at Thoumieux under the direction of Jean-François Piège.
From 2017, he served as Executive Pastry Chef at Stohrer, and in 2021 he opened his own pâtisserie. What both pâtisseries share is an approach rooted in classical tradition, yet enriched with his own original and inventive ideas.
In this book, classic pastries such as weekend citron, flan, croissant, forêt noire, financier, Saint-Honoré, tarte Tatin, riz au lait, canelé, and baba appear as recipe titles. However, upon turning the pages, the reader discovers creations that are entirely different from what one might initially imagine.
Each recipe is also accompanied by a selection of music to listen to while preparing the pastry. This book allows the reader to delve deeply into the aesthetics and sensibility of Jeffrey Cagnes.
