現代スペイン料理の現在地と、その先に続く時間を切り取った雑誌、Apicius アピシウス。

世界各国のトップシェフを取り上げることで知られているが、今号では二人のシェフと二つのレストランに焦点を当てている。

登場するのはカタルーニャのMiramar ミラマールを率いるPaco Perez パコ・ペレスと、リオハのVenta Moncalvillo ベンタ・モンカルビージョのIgnacio Echapresto イグナシオ・エチャプレスト。

2026年現在、どちらのレストランもミシュラン二ツ星を獲得しているが、Miramar ミラマールは地中海に面した港町リャンサ、Venta Moncalvillo ベンタ・モンカルビージョは山々や菜園に囲まれたダロカ・デ・リオハというまったく異なる環境にある。ただ両者に共通しているは土地との深い結びつきである。

今号ではそれぞれの料理と共に、食材との向き合い方、創作のプロセス、レストランが築いてきた哲学についても掘り下げられている。

Featured are Paco Pérez of Miramar in Catalonia and Ignacio Echapresto of Venta Moncalvillo in Rioja.

As of 2026, both restaurants hold two Michelin stars, yet they are rooted in completely different environments. Miramar overlooks the Mediterranean in the coastal town of Llançà, while Venta Moncalvillo is surrounded by mountains and vegetable gardens in Daroca de Rioja.
