今作はショコラティエであるThierry Mulhaupt ティエリー・ミュルプトが、チョコレートとコロンビアを巡る自身の体験をもとに綴った一冊である。ルセットと共に旅の記憶や味覚の感動、土地との出会いが記されている。
舞台となるのはコロンビア。
国土を北から南へと巡る中で出会ったカカオの産地や人々、豊かな自然が、著者の視点を通して描かれていく。その過程で育まれたアグロフォレストリーや生物多様性、持続可能なカカオ生産への関心は、アンデス山脈の麓に10ヘクタールのカカオ農園を取得するという実践へとつながっている。

This volume is written by chocolatier Thierry Mulhaupt and is based on his personal experiences traveling through Colombia alongside chocolate. Through its recipes, the book also conveys memories of travel, sensory impressions, and encounters with the land.
Set in Colombia, the narrative follows the author as he journeys from north to south, portraying cacao-growing regions, the people he meets, and the country’s rich natural environment through his own perspective. Along the way, his growing interest in agroforestry, biodiversity, and sustainable cacao production leads to a concrete commitment: the acquisition of a ten-hectare cacao plantation at the foothills of the Andes.
The book includes around fifty recipes, ranging from chocolate-based desserts to meat and fish dishes incorporating cacao. Moving fluidly between sweet and savory, pastry and cuisine, it naturally demonstrates the wide expressive potential of cacao.
In addition, the book touches on the history and cultivation of cacao, the production of chocolate, approaches to tasting, and the environmental and social contexts surrounding it. Throughout, chocolate is presented not merely as an ingredient, but as a subject shaped by culture, place, and human relationships.
Alongside the pleasure of flavor, the book quietly conveys the connections between land, nature, cacao, and the people who engage with it.
