雑誌と表現したが、縦 30cm×横 23cm×幅 2cmと大判の雑誌であり写真に迫力がある。
年間2冊刊行され、言語は英語となっている。

今号の表紙を飾っているのはスペインのショコラティエ・パティシエであるEnric Monzonis エンリク・モンゾニス。
かつては料理人として働いていたがパティシエに転身、スペインを代表するパティスリーであるYann Duytsche ヤン・ドゥイッチのDolç ドルスやLa Coupe du Monde de la Pâtisserieのチャンピオン、Josep Maria Rodríguez ジョセップ・マリア・ロドリゲスで腕を磨き、Albert Adrià アルバート・アドリア率いるTickets チケッツでペストリー・シェフを務めた人物だ。

彼によるデザートは非常にイノベーティブ。淡い色合いとは裏腹に紫蘇、スモーク・ココナッツ、ライム、生姜、柚子、トンカといった鮮烈な風味が想像できる組み合わせとなっている。

写真を眺めているだけでも楽しい1冊。
