Located south of Paris, the town of Montargis is known for its network of canals, earning it the nickname “the Venice of France.” It has long been recognized as a center of confectionery production.

Based in this town, Mazet—founded in 1636—is a historic confectionery house known as the birthplace of the praline de Montargis. This book explores the world of confectionery and pâtisserie through the history and techniques of the house.

The author, Hugues Pouget, is a pastry chef known as the founder of Hugo & Victor. After training under Jean-Paul Hevin, he established his own brand and developed a contemporary approach to pastry. He has also been involved in the revival of Mazet, reinterpreting its traditional pralines with a modern sensibility.

The book presents around 50 recipes rooted in the techniques and heritage of Mazet.
