学校を卒業後、ソウルの梨大 イデにカップケーキ専門店をオープンして8年間運営したが、より深くお菓子を学びたいという思いから渡仏。フランスのBellouet Conseil ベルエ・コンセイユで知識と経験を積み、再び韓国でL'ecole Cakuというベーキングスタジオをオープンした。

この書籍ではベースとなる生地のつくり方から型に生地を敷くフォンサージュの方法、可愛らしくも本格的なフランやパイが掲載されており、そのそれぞれがステップバイステップの写真付きで解説されている。

その他にもフランやパイに関するQ&Aなども記載されており、しっかりと理解を深めながら実践することができる書籍となっている。

This volume is dedicated to flans and pies, featuring both sweet and savory variations of each.

The author, Kim Da-eun, opened a cupcake specialty shop in the Ewha (Ihwa) area of Seoul after graduating from school and ran it for eight years. Driven by a desire to deepen her understanding of pastry, she later moved to France, where she trained at Bellouet Conseil and gained further knowledge and experience. Upon returning to Korea, she founded the baking studio L'ecole Caku.

The book covers everything from preparing the base dough to the technique of fonçage—lining the tart ring or mold with precision. A wide range of charming yet technically refined flans and pies are presented, each explained with step-by-step photographs.

In addition, the volume includes Q&A sections related to flans and pies, allowing readers to strengthen their understanding while putting the techniques into practice.
