オーストリア・ザルツブルクのRed Bull Hangar-7内に位置するRestaurant Ikarus イカルスは、毎月世界各国のトップシェフを招聘するという独自のコンセプトで知られるレストランである。

エグゼクティブシェフMartin Klein マルティン・クラインのもと、これまでに40カ国以上、270名を超える料理人が参加し、それぞれの哲学や技術を持ち寄ってきた。

本書は2025年に行われたゲストシェフとチームによる料理が掲載されたもので、各料理人の個性と現代ガストロノミーの多様性が反映されている。

Restaurant Ikarus, located inside Red Bull Hangar-7 in Salzburg, Austria, is known for its unique concept of inviting top chefs from around the world every month.

Under the direction of Executive Chef Martin Klein, more than 270 chefs from over 40 countries have participated, each bringing their own philosophy and techniques.

This book presents the dishes created in 2025 by guest chefs in collaboration with the Ikarus team, reflecting both the individuality of each chef and the diversity of contemporary gastronomy.
