フランス西部に位置するPoitou-Charentes ポワトゥー=シャラント。
La Rochelle ラ・ロシェルやRoyan ロワイヤンといった観光地を有し、農業や漁業が盛んな地域だ。

特産品としてマレンヌ・オレロン湾の牡蠣やコニャック、ピノー・デ・シャラント、AOCバター、隠元豆、カグイユ、仔羊、シェーヴルチーズなどが挙げられ、様々な菓子やリキュールなどに用いられるアンジェリカも伝統的に栽培されている。

今著はポワトゥー=シャラントのレストランが加盟しているTables gourmandes de Poitou-Charentesの30周年を記念して制作されたもので、ポワトゥー=シャラントを巡る美食の旅が40名のシェフによる40点のレシピで紹介されている。
