今作は2005年に設立された国際的なパン職人組織、Ambassadeurs du Painの20年にわたる歩みをまとめた記念書籍である。Mondial du Painを中心とした国際大会と、RESPECTUS PANISの理念を軸に、製パンをめぐる技術と思想、そして人のつながりを振り返っている。

冒頭では組織誕生の背景や設立当初の思想、パンを文化として守り伝えるための取り組みが紹介される。RESPECTUS PANISに象徴される長時間発酵や自然な製法への視点は、競技だけでなく日常の製パンにも通じる考え方として位置付けられている。

This volume is a commemorative publication that traces twenty years of activity by the international bakers’ organization Ambassadeurs du Pain, founded in 2005. Centered on the Mondial du Pain international competition and the principles of RESPECTUS PANIS, it looks back on the techniques, ideas, and human connections that have shaped contemporary breadmaking.

The opening section introduces the origins of the organization, its founding philosophy, and its efforts to preserve and pass on breadmaking as a cultural practice. The perspective embodied by RESPECTUS PANIS—long fermentation and natural methods—is presented as an approach that extends beyond competition, resonating with everyday bread production.

In the middle chapters, the book follows the history of the Mondial du Pain year by year, documenting the evolution of techniques and forms of expression refined through competition, as well as the expansion of international exchange. Recipes created by the winners of each year are also included.
