This volume is the first cookbook by world-renowned chef Nobuyuki Matsuhisa, bringing together the origins of what would come to be known as the “NOBU” style of cuisine. First published in English in 2001, it introduced a distinctive culinary approach rooted in Japanese technique while incorporating multicultural influences, particularly from Peruvian cuisine.
The Japanese edition includes additional content tailored to local readers, such as a newly added chapter on donburi dishes, making the structure more familiar and accessible.
Focusing primarily on seafood, the book spans sushi, salads, vegetable dishes, sauces and dressings, desserts, and sake, with more than 100 recipes in total. The scope reflects the breadth of Nobu’s cuisine, balancing precision with a sense of openness to different culinary traditions.
Alongside the recipes, the book also traces Matsuhisa’s culinary journey, the formation of the NOBU concept, and the background of the restaurants themselves.
