Perfect Cream & Dessert、完璧なクリームとデザートと題された今作は韓国のパティスリー Vanilla Cloud バニラクラウドを運営してきたパティシエ、Park Ye-na パク・イェナによるものだ。

今作は長年に渡ってクリームを中心としたデザートを作ってきた彼女による、クリームをテーマにした書籍となっている。

本書では現代のデザートで広く用いられるクレーム・シャンティイ、クレーム・パティシエール、バタークリーム、ガナッシュ・モンテの4種類を中心に解説。それぞれの基本配合だけでなく、素材や配合を変化させた応用クリームまで幅広く紹介している。

収録されているクリームは66種類。

Drawing on years of experience creating cream-centered desserts, the author presents a volume entirely devoted to the art and technique of cream.

The book focuses on four of the most widely used creams in modern pastry: Crème Chantilly, Crème Pâtissière, Buttercream, and Ganache Montée. In addition to their fundamental formulas, it explores numerous variations created through different ingredients and flavor combinations.

A total of 66 cream recipes are included.

The book also features 20 dessert recipes and 84 variation ideas, demonstrating how these creams can be applied to a wide range of creations, including scones, pancakes, verrines, mille-feuille, choux pastries, fraisier, and tarte Tatin.
