In the latter half of the twentieth century, restaurants in Paris developed as spaces that embodied urban culture, social life, and architectural expression. Beyond the food itself, interiors, atmosphere, and spatial composition played a central role in shaping each establishment’s identity.

This volume approaches Parisian restaurant culture not from a culinary perspective, but through the lens of architecture and space.
