Restaurant Ikarus, located inside Red Bull Hangar-7 in Salzburg, Austria, is known for its unique concept of inviting top chefs from around the world every month.

Under the direction of Executive Chef Martin Klein, more than 270 chefs from over 40 countries have participated, each bringing their own philosophy and techniques.

This book presents the dishes created in 2025 by guest chefs in collaboration with the Ikarus team, reflecting both the individuality of each chef and the diversity of contemporary gastronomy.

Each chapter includes interviews that explore the chefs’ backgrounds, their way of thinking, and their technical approaches. It also highlights key ingredients featured in each monthly menu, as well as their production context, offering insight into the broader environment surrounding the cuisine.
