今著はスウェーデン第二の都市、ヨーテボリを代表するレストランとして知られたThörnströms Kök トーンストロムス・ショークの25年間を記録した一冊である。

This book chronicles the 25-year history of Thörnströms Kök, a restaurant that became one of the leading dining destinations in Gothenburg, Sweden’s second-largest city.

Founded in 1997 by Anne Thörnström and Håkan Thörnström, the restaurant earned one Michelin star in 2011 and remained one of Sweden’s most respected fine dining establishments until its closure in 2021.

The book traces the journey of the restaurant from its opening to its final service, offering an inside look at the growth of a Michelin-starred restaurant. It explores the realities of kitchen and dining room operations, the relationships built with staff over the years, and the many aspects of restaurant management that remain unseen by guests.

The volume also includes a selection of recipes by Håkan Thörnström.
