2021年1-2月号を最後に廃刊となっていたが、多くのファンからの声を受けて復刊されたyam。
年間で発刊されるのは6冊で、その中には通常版以外にドリンク版(夏)、パティスリー版(冬)、特別号2冊が含まれている。
今号で特集が組まれているのはフランス・マルセイユで2008年以来三ツ星を獲得しているレストラン Le Petit Nice ル・プティ・ニースのオーナーシェフ、Gérald Passedat ジェラール・パセダだ。
三ツ星レストランであるAlain Chapel アラン・シャペルでの食事をきっかけに料理人を目指したという彼。
Bristol ブリストル、Crillon クリヨン、Troisgros トロワグロ、Michel Guérard ミシェル・ゲラールといた名立たるレストランやシェフに師事し、魚介や地中海料理に情熱を注いでいることでも有名だ。
今号では円熟の域に達したGérald Passedat ジェラール・パセダによる見事な料理が掲載されている。
もう一つの特集ではパリを代表するホテルの一つ、Rits Paris リッツ・パリの料理とカクテルにスポットが当てられている。
メインダイニングのEspadon エスパドンで指揮を執るEugénie Béziat ウジェニー・ベジアとバーマン、Romain de Courcy ロマン・ド・クルシーによる洗練された作品たちも必見だ。
The magazine yam, which had ceased publication with its January–February 2021 issue, was revived following strong demand from its readership. It now publishes six issues per year, including regular editions alongside a summer drinks issue, a winter patisserie issue, and two special issues.
This issue is dedicated to Gérald Passedat, owner-chef of the Marseille restaurant Le Petit Nice, which has held three Michelin stars continuously since 2008.
Inspired to become a chef after dining at the three-Michelin-star Alain Chapel, Passedat trained at leading establishments and alongside major figures such as Le Bristol, Hôtel de Crillon, Troisgros, and Michel Guérard. He is widely known for his deep commitment to seafood and Mediterranean cuisine.
This issue presents a selection of refined dishes by Gérald Passedat, reflecting a culinary style that has reached a high level of maturity.
Another feature turns the spotlight on the cuisine and cocktails of Ritz Paris, one of Paris’s most iconic hotels. Highlights include creations from Espadon, led by chef Eugénie Béziat, as well as elegant cocktails by head bartender Romain de Courcy.
Together, these features offer a view of contemporary French gastronomy shaped by both coastal terroir and Parisian refinement.
